Tex Mex Tater Tot Hot Dish
A twist on the traditional Tater Tot Hot Dish.
I love my traditional Tater Tot Hot Dish recipeĀ https://www.hotdishhomemaker.com/tater-tot-hot-dish/ but I decided to change things up a bit. My family loves Mexican food so adding a little Tex Mex flair into this Hot Dish recipe was well received.
TEX MEX TATER TOT HOT DISH
Ingredients:
- 1 Pound Lean Ground Beef
- 1 (32 oz.) Bag Tater Tots (you will only use aprox. 1/2 of the bag)
- 2 (15.25 oz.) Cans Southwest Corn, drained
- 3 Tablespoons Taco Seasoning
- 1 Cup Yellow Onion, diced
- 2 (10 3/4 oz.) Cans Fiesta Nacho Cheese Soup
- 2 Cups Shredded 3 Cheese Mexican Style Cheese Blend
Directions:
1. Preheat oven to 350 degrees.
2. In a large frying pan, brown the Beef and cook the Onion until tender, at the same time, in the same pan. Drain any excess fat out of the pan. Transfer the Beef and Onion into an 11 x 8 baking dish. Spread the Beef and Onion mixture out evenly in bottom of the dish.
3. Layer the Southwest Corn evenly over the Ground Beef.
4. Evenly spread the Fiesta Nacho Soup over the Corn.
5. Layer the Tater Tots in even rows on top of the Soup layer, as you see here. You won’t use the whole bag, just put any leftover Tots back in the freezer for another meal.
6. Bake the Hot Dish for about 40-45 minutes. Check at the 30 minute mark. You want the Hot Dish to be hot and bubbly, and the tots to be golden brown.
7. Remove the Hot Dish from the oven and sprinkle the Mexican Blend Cheese, evenly over the top of the Tater Tots. Pop the dish back in the oven and bake just until the Cheese is all melted, then remove the Hot Dish from the oven and let it cool for about 5 minutes prior to serving. It will be piping hot!
Serve this with a dollop of sour cream on the side or a sprinkle of fresh cilantro on top if you wish.
