Super Moist Chocolate Cherry Cake

A delicious super moist Cake!

I hate dry Cake. This recipe creates a Super Moist Cake and it is made so easily, starting with a box mix. Someone told me years ago that you can mix Cherry Pie Filling with a Chocolate Cake mix to create an easy 9 x 12 Cake Dessert. I didn’t have a recipe but I had the general idea. So combining this easy to make Cake with a homemade Frosting, resulted in a delicious Cake that got rave reviews.

SUPERMOIST CHOCOLATE CHERRY CAKE

Ingredients:

  • 1 (15.25 oz.) box Devils Food Cake Mix
  • 1 (21 oz.) Cherry Pie Filling
  • 3 Large Eggs
  • 3 Teaspoons Almond Extract
  • 1 Cup Sugar
  • 5 Tablespoon Unsalted Butter
  • 1/3 Cup Whole Milk
  • 1 Cup Semisweet Chocolate Chips
  • Chopped Almonds, to garnish top

Directions:

1. Preheat oven to 350 degrees. Use Baking Spray w/Flour, to coat a 9 x 13 pan, set aside.

2. In a large mixing bowl, whisk together the Eggs and 2 Teaspoons of the Almond Extract.

3. Stir the Cake Mix and Cherry Pie Filling into the beaten Eggs. Fold together, until everything is incorporated.

4. Transfer the Batter to the prepared pan. Spread the Batter out evenly in the pan.

5. Bake the Cake for 25-35 minutes. The Cake is done when a toothpick inserted in the center comes out clean. The Cake took 25 minutes in my oven.

6. When the Cake is done, remove it from the oven and allow it to cool slightly.

7. In a medium saucepan, melt the Butter over low heat.

8. Whisk the Sugar and Milk into the melted Butter. Increase the heat to medium and continue to whisk until the mixture comes to a boil. Continue to whisk for about 2 minutes then remove the pan from the heat and stir in the Chocolate Chips. Whisk thoroughly until the Frosting becomes smooth and glossy.

9. Pour the Frosting over the warm Cake, use a frosting spatula to spread the Frosting over the Cake evenly.

10. Sprinkle the Almonds over the top of the Cake. Allow the Cake to cool completely before slicing and serving.
