Pretty In Pink Coleslaw
A tasty colorful Coleslaw.
Looking for a new Coleslaw recipe? You have to try this one! I am not a big Coleslaw fan myself, but I love this recipe. The flavors are so complimentary and the color is eye catching. My husband is a huge Coleslaw fanatic and he gave me a thumbs up on this dish. I like the Cilantro on top but you don’t need it to finish this dish. It merely adds a little flavor profile on top and brings a hint of additional color to the presentation.
PRETTY IN PINK COLESLAW
Ingredients:
- 8 Cups Red Cabbage, thinly sliced then rough chopped
- 1 Cup Red Onion, thinly sliced, then rough chopped
- 1 Cup Radishes skin on, matchstick cut
- 1 Cup Unsweetened Shredded Coconut
- 3 Tablespoons Pure Beet Juice
- 1 & 1/2 Cups Mayonnaise
- 1/4 Cup Honey
- Cilantro for garnish, optional
Directions:
1. Add the Cabbage, Red Onion, Radishes and Coconut in a large mixing bowl. Set aside.
2. In a small mixing bowl, whisk together the Mayonnaise, Beet Juice and Honey until well combined. Be careful when working with the Beet Juice, it will stain, so wipe up any spills right away. The Beet Juice creates a lovely pink Dressing!
3. Drizzle the Dressing over the Cabbage mix and fold everything together until all the ingredients are well coated.
Store any leftovers in a covered container in your refrigerator. It will keep for 2 days in the refrigerator.
