Irish Cream Brownies
A Frosted Brownie with the flavors of Irish Cream.
A twist to this recipe is that I used Irish Cream flavored Creamer instead of the Liqueur. This Brownie is moist and full of flavor.
IRISH CREAM BROWNIES
Brownie Ingredients:
- 1/2 Cup (1-stick) Unsalted Butter
- 1/2 Cup Baileys Irish Cream Flavor Coffee Creamer
- 1 Cup Flour
- 1/4 Teaspoon Baking Soda
- 1/4 Teaspoon Baking Powder
- 1/4 Teaspoon Salt
- 1/3 Cup Unsweetened Cocoa
- 2/3 Cup Sugar
- 1 Egg
Frosting Ingredients:
- 1/2 Cup Baileys Irish Cream Flavor Coffee Creamer
- 4 Ounces Bakers Premium White Chocolate
- 1/8 Teaspoon Green Food Coloring
- Green Decorating Sugar Crystals
Directions:
1. Preheat your oven to 350 Degrees. Spray an 8 x 8 baking pan with nonstick baking spray and set aside.
2. In a medium bowl, stir together the Flour, Baking Powder, Baking Soda and Salt. Set aside.
3. In a small pan, melt the Butter, remove from heat and allow to cool slightly.
4. In a separate bowl whisk the Egg and Vanilla. Then whisk in the Sugar, Cocoa and 1/2 Cup of the Irish Cream. Now slowly whisk in the cooled Butter. You don’t want to put hot Butter into the mixture or you will scramble the Eggs.
5. Using a wooden spoon, begin to incorporate the Irish Cream Mixture into the Flour mixture. Go slowly, adding small amounts of the Irish Cream Mixture at a time.
6. Continue to stir and scrape the sides of the bowl until the Batter is smooth, then transfer the Batter to the prepared pan spreading the Batter out to the edges.
7. Bake the Brownies in the preheated oven for 18-25 minutes. All ovens cook differently so check them at the 15 minute mark. You are looking for them to be set and when a toothpick inserted in the center comes out clean, they are done.
8. Allow the Brownies to cool completerly.
9. To make the Frosting, break apart the White Chocolate pieces and place them in a medium size bowl.
10. In a small saucepan, heat 1/2 Cup of the Irish Cream just until it barely starts to boil. DO NOT let it boil, just look for it to start with a bubble or two then remove from the heat, immediately pour it evenly over the White Chocolate in the bowl. DO NOT stir. Leave the bowl sit for 10 minutes.
11. After 10 minutes, whisk in the Green Food Coloring scraping the sides until the Frosting is smooth.
12. Now Pour the frosting evenly over the top of the completely cooled Brownies. Sprinkle with the Green Decorating Sugar. Cover the pan tightly and refrigerate until the Frosting is set, about an hour.
