Grilled Corn Salad
A Salad fresh from your garden.
Many of you will have these items available in your garden. I grow my own Tomatoes and Basil. I like to get my Corn fresh at the farmers market or at a roadside stand.
This Salad is so easy to prepare and you can use leftover grilled Corn as well. The simplicity is the key with this Salad, allowing the sweet grilled Corn flavor and the aromatic Basil flavor to shine through.
Because there is no dairy or mayo in this recipe it is easy to bring to a picnic or barbecue. It will definitely be a big hit!
GRILLED CORN SALAD
Ingredients:
- 2 Cups Grilled Corn Kernels (about 3 or 4 ears)
- 1 Cup Grape or Cherry Tomatoes, halved or quartered
- 1/8 Cup Extra Virgin Olive Oil
- 3/4 Cup Fresh Basil, chiffonade
- Freshly Ground Black Pepper
Directions:
1. First grill your Corn. Shuck the Corn and throw it right on the grill. Grill for about 10 minutes turning the Corn so all sides get a little char/brown bits. This is the Corns sugar caramelizing a bit which really brings out the flavor.
2. Allow the Corn to cool then remove the kernels from the cob with a sharp knife.
3. Place the Corn in a medium/large bowl and set aside.
4. Cut the Cherry or Grape Tomatoes in half or quarter them. These Tomatoes can range in size so cut your pieces all close to the same size to present them in the Salad, then add them to the bowl with the Corn.
5. Cut your Basil in the chiffonade style which merely means stack your Basil Leaves, they don’t need to be the same direction or even the same size, then roll them like a cigar. Now slice the roll. This will create strips of the Basil and I also do a quick rough chop through the strips then add it in with the Corn and Tomatoes in the bowl.
6. Now drizzle the Olive Oil over the Salad and give your Pepper Mill a few good turns over all. Fold everything together using a spatula ensuring the ingredients are all coated with the Olive Oil.
7. You are now ready to serve this Salad or you can chill the Salad for several hours prior to serving. Just give the Salad a good stir before serving.
