Curry Wild Rice Chicken Salad

A hearty Curry Chicken Salad with Wild Rice.

I tend to make a lot of dishes with Wild Rice. I am from Minnesota and Wild Riced is a staple here. I make this recipe in the morning then let the Salad sit in the refrigerator until lunchtime. This allows the flavors to marry. With a slight crunch from the Celery, a hint of sweet from the Golden Raisins and then the earthiness from the Curry, chicken and Wild Rice, this Salad is a winner!

CURRY WILD RICE CHICKEN SALAD

Ingredients:

  • 4 Cups Cooked Chicken, diced
  • 4 Cups Wild Rice, cooked and cooled
  • 1 & 1/2 Cups Celery, diced
  • 1 Cup Green Onion, diced
  • 1 & 1/2 Cups Golden Raisins
  • 1/8 Cup Curry Powder
  • 1 Cup Mayo
  • 1/4 Cup Half & Half
  • 1 Tablespoon Freshly Ground Black Pepper

Directions:
1. In a small mixing bowl, whisk together the Mayo, Half & Half, Curry Powder and the Pepper. Set aside.

2. In a large bowl add the Chicken, Celery, Raisins, Green Onion and the Wild Rice.

3. Gently fold in the Mayo Curry Dressing.

4. Cover and refrigerate the Salad for 2-3 hours to allow the flavors to marry, prior to serving.

I like to serve this with old fashioned clover buns or butter croissants.
