Cucumber Carrot Salad
A light refreshing Salad.
This Salad is so easy to make and it is so refreshing. It is perfect to serve in the heat of the summer. Pair this with grilled fish or grilled chicken and you will have a perfect summer meal.
CUCUMBER CARROT SALAD
Ingredients:
- 1 Large English Cucumber
- 1 Cup Matchstick Carrots
- 1 Tablespoon Toasted Sesame Seeds
- 1/4 cup Seasoned Rice Vinegar (sweet & tangy)
- 1/4 Cup Soy Sauce
- 1/4 Cup Extra Virgin Olive Oil
- 2 Tablespoons Pure Sesame Oil
- 2 Teaspoons Sugar
Directions:
1. Add the Soy Sauce, Olive Oil, Rice Vinegar, Sugar, Sesame Oil, Sesame Seeds and Sugar into a jar with a tight fitting lid. Shake well and set aside.
2. Thinly slice the Cucumber and transfer into a large bowl.
3. Add the Carrots to the bowl.
4. Shake the Dressing in the jar, vigorously, then pour it over the Cucumbers and Carrots in the bowl. Gently fold everything together ensuring the Dressing coats all the Cucumbers and Carrots.
5. Cover the bowl and chill the Salad in the refrigerator until ready to serve. Be sure to give the Salad a stir just prior to serving.
