BROCCOLI HAM HOT DISH
Ingredients:
- 2 Cups Cooked Ham, cut into bite size pieces
- 2 Cups Broccoli Florets
- 12 Ounces Elbow Macaroni
- 1 (10 1/2 oz.) Cans Cream of Mushroom Soup
- 2 & 1/2 Cups Shredded Cheddar Cheese
- 1 Cup Half & Half
- 3/4 Cup Green Onion, diced
- 1 (4 oz.) Jar Pimentos
- 1 & 1/2 Cups Roasted Corn
- 2 Tablespoons Bacon Bits, optional
- Freshly Ground Black Pepper
Directions:
1. Preheat oven to 375 degrees.
2. Spray a 13 x 9 baking dish with non-stick cooking spray, set aside.
3. Cook Macaroni according to package directions, drain and set aside.
4. In a large bowl whisk together 2 cans Soup and the Half & Half. Give your Pepper mill a few good turns over all and whisk again.
5. Add the Broccoli, Ham, Pimentos, Green Onion and 1 & 1/2 Cups of the Cheddar Cheese to the Soup mixture. Fold the ingredients together to coat all, then transfer to the prepared baking dish.
6. Bake the Hot Dish for 25-35 minutes in the preheated oven. Check the Hot Dish at the 15 minute mark. All ovens cook differently so you are looking for the Hot Dish to be bubbly and the Cheese melted. The last 10 minutes of baking time, sprinkle the top with the last 1 Cup of Cheddar Cheese and the Bacon Bits. Bake until the Cheese is melted.
7. When the Hot Dish is done, remove from the oven and let it rest 2-3 minutes before serving.
