Asian Chicken Wraps

Quick and easy flavorful Wraps.

These Wrap sandwiches are so easy to make and they are great for a light refreshing lunch. Tender Chicken, a little crunch from the Coleslaw and Carrots along with a great Peanut Sauce and Ginger, to give these Wraps such a great flavor profile.

ASIAN CHICKEN WRAPS

Ingredients:

  • 2 Cups Cooked Chicken, shredded (I use rotisserie)
  • 1 Cup Carrots, shredded
  • 3 Cups Deli Coleslaw Mix
  • Handful Cilantro, rough chopped
  • 5 Burrito size Tortillas

Sauce Ingredients:

  • 1/4 Cup Creamy Peanut Butter (don’t use natural)
  • 1/4 Cup Extra Virgin Olive Oil
  • 1/4 Cup Honey
  • 1 Teaspoon Chili Oil
  • 1 Teaspoon Sesame Oil
  • 1 Tablespoon Soy Sauce
  • 3 Tablespoons Rice Vinegar
  • 1 Tablespoon Fresh Ginger, grated

Directions:

1. Add all of the Sauce Ingredients into a mason jar. Seal the jar tightly and shake well. Set the Sauce aside.

2. In a large bowl add the Coleslaw, Carrots, Chicken and the Cilantro.

3. Shake the Sauce once again and reserve about 1/2 cup in a small bowl or ramekin to use for dipping. Drizzle the remaining Sauce over the Coleslaw mixture in the bowl. Fold everything together ensuring the Sauce has coated all the ingredients.

4. Place equal amounts of the Chicken mixture in the 5 Tortillas and wrap each one tightly. Place them on a cutting board, seam side down. Use a serrated knife to slice each Tortilla in half. Place them on a serving tray or plate them individually. Serve the extra Sauce on the side for dipping.
