Curry Chicken Pasta Salad

A great Summer Salad.

This Salad has great flavor from the crispness of the Celery and Onion to the refreshing Red Grapes. The Chicken and Penne Pasta round out the flavors in an easy to make Curry Dressing. Serve this for lunch on its own or serve as a side dish on a buffet.

CURRY CHICKEN PASTA SALAD

Ingredients:

  • 4 Cups Cooked Chicken, shredded (I used rotisserie chicken)
  • 4 Cups Penne Pasta, cooked and cooled
  • 1 Cup Red Onion, diced
  • 1 & 1/2 Cups Red Grapes (if they are large grapes, cut them in half)
  • 1 & 1/2 Cups Celery, diced
  • 2 Tablespoons Curry Powder
  • 1 Cup Mayo
  • 1/4 Cup Half & Half
  • 1 Tablespoon Freshly Ground Black Pepper

Directions:

1. In a small mixing bowl, whisk together the Mayo, Half & Half, Curry Powder and the Pepper. Set aside.

2. In a large bowl add the Chicken, Celery, Grapes, Red Onion and the Pasta.

3. Gently fold in the Mayo Curry dressing, ensuring everything gets coated.

4. Cover and refrigerate the Salad for 2-3 hours to marry the flavors. Stir the Pasta Salad just prior to serving.
