Easy Baked Chicken Quesadillas Recipe.

I love Quesadillas, but if you are making them in a pan, on your stovetop, you are limited on the amount that will fit in the pan. Plus if you are not careful when flipping them, you can lose a lot of the filling. With this method of cooking Quesadillas, you can make more servings all at one time and no flipping.

Vary this recipe by using your favorite Salsa. You can use any heat level and you can even use chunky salsa if you prefer. Use leftover Chicken or even Rotisserie Chicken.

Don’t forget the sides when serving these Chicken Quesadillas. You can offer Sour Cream, extra Salsa, Sliced Jalapenos, Lime Wedges, Shredded Lettuce and additional Cilantro.

EASY OVEN BAKED CHICKEN QUESADILLAS

Ingredients:

  • 1 Cup Cooked Chicken, shredded
  • 2 Cups Mexican Style Cheese Blend, shredded
  • 1/2 Cup Salsa
  • 3 Burrito Size Tortillas
  • 2 Tablespoons Fresh Cilantro (optional)
  • Cooking Spray

Directions:

1. Line 2 baking sheets with parchment paper set aside.

2. Preheat oven to 425 degrees.

3. In a large bowl Stir together the Chicken and the Salsa.

4. Add the Cheese and Cilantro (if using) to the Chicken mixture. Stir well to make sure everything is combined.

5. Very lightly spray one side of each Tortilla with the Cooking Spray. I can not stress enough that you need very little of this Spray. The Spray helps to lightly crisp up the Tortillas and give a light golden color. If you use too much Spray, it can burn easily.

6. Lay the Tortillas on the baking sheets with the Cooking Spray side down.

7. Divide the Chicken mixture into thirds. Place 1/3 on one half of each Tortilla. Fold the Tortilla over and press down lightly, ensuring the Chicken mixture remains inside.

8. Bake the Chicken Quesadillas for 6-10 minutes. No need to flip them over, just watch for the Cheese to be melted and a slight golden color on the edges, and then the Quesadillas are done.

9. When the Quesadillas are done, remove them from the oven and let them rest for about 1 or 2 minutes before slicing. If you cut into them too quickly, the filling will run out. To slice, I suggest using a kitchen shears or pizza scissors. Using either of these tools is better than a knife because a knife sometimes forces the filling out. If you don’t have a kitchen shears or pizza scissors use a large sharp knife and place the Quesadillas on a cutting board first. You should get 9 good size Quesadilla slices.

10. Serve the Quesadillas with sides such as Sour Cream, Salsa, Shredded Lettuce, Lime Wedges or Jalapeno Slices.
