Rosemary Roasted Red Potatoes
An elegant Roasted Potato side dish.
Baby Red Potatoes are excellent roasted. they have a creamy texture and the skin is usually thin so it is left on the Potatoes for this cooking process.
Rosemary is the crowning touch to these Potatoes. The Rosemary makes this dish very fragrant and classic. I must say, this is one of my favorite ways to prepare a Potato side dish. It pairs well with roasted chicken, pork roast or even a nice beef tenderloin. These Potatoes also would be great to serve on a brunch buffet next to a smoked ham.
I grow Rosemary in my garden in the summer months and I pick up Baby Red Potatoes at the Farmers Market. Nothing better than fresh Herbs from the garden and fresh produce from the farm.
ROSEMARY ROASTED RED POTATOES
Ingredients:
- 4 Cups Baby Red Potatoes, quartered with skin on
- 2 Tablespoons Fresh Rosemary, chopped
- 2 Teaspoons Minced Garlic
- 2 Tablespoons Extra Virgin Olive Oil
- 1/8 Cup Parmesan Cheese, shredded
- Freshly Ground Black Pepper
Directions:
1. Preheat oven to 400 degrees.
2. Prepare your Potatoes. Small/baby Red Potatoes come in all sizes. You should quarter them but if you have a few that are a bit larger you can cut them again to keep all the Potatoes close to the same size. That way they will all finish roasting at the same time. You want to avoid some getting overly cooked and/or some being under cooked.
3. Prepare the Rosemary by removing the needle like leaves from the stem then give the Rosemary a rough chop. This releases more of the fragrant aroma and creates smaller size Rosemary for consuming.
4. Place the Potatoes on a large baking sheet. Drizzle the Olive Oil over all. Sprinkle the Rosemary, Parmesan Cheese and Garlic over the top of the Potatoes. Use your hands to give the Potatoes a good stir and ensure all the Potatoes are coated with the oil. Then give your Pepper mill a few good turns over all.
5. Now place the prepared Potatoes in the preheated oven. Roast for about 35-40 minutes. All ovens cook differently so check them at the 20 minute mark and give them a good stir. You want the Potatoes to be fork tender and have a hint of golden color as you see here.
