Sesame Peanut Noodles

A creamy Asian inspired Noodle dish.

This Noodle recipe is a favorite in my household. It is so quick and easy to make, I often serve it for a nice light lunch or a summer dinner. Once you try it, you will want to make this often. The flavors are so satisfying especially if you like Asian inspired food.

I found natural peanut butter works best in my recipe but you can use regular peanut butter if you do not have any on hand.

SESAME PEANUT NOODLES 

Ingredients:

  • 3 Cups Brown Rice Noodles, cooked
  • 2 Tablespoon Rice Vinegar
  • 1 Tablespoon Oyster Sauce
  • 2 Tablespoons Sesame Oil
  • 3 Tablespoons Natural Peanut Butter
  • 1 Teaspoon White Sugar
  • 2 Teaspoons Hot Chili Oil
  • 1/4 Cup Shredded Carrots
  • 1/2 Cup plus 2 Tablespoons Green Onions, diced
  • 3 Tablespoons Sesame Seeds

Directions:

1. Whisk together the Vinegar, Oyster Sauce, Sesame Oil, Peanut Butter, Sugar and Chili Oil, in a small microwave safe bowl. Then place in the microwave for 1 minute just to soften the Peanut Butter, then whisk again until smooth. Set aside.

2. Cook the Noodles according to package directions and then drain them.

3. In a large bowl stir together the Noodles, Carrots, 1/2 Cup Green Onions, 2 Tablespoons Sesame Seeds and the Peanut Sauce  ensuring all the Noodles get coated with the Sauce.

4. Just before serving, garnish the top with 1 Tablespoon Sesame Seeds and 2 Tablespoons Green Onions.
